Vinification and maturation
The grapes undergo a soft, delicate pressing. This is followed by maceration of the must on the skins for 24 hours at 5° C. (41° F.) in order to extract aromatic substances. Fermentation takes place at controlled temperatures (18°-20° C.; 64°-68° F.) and the wine then remains to mature for a period on its own natural lees.
Pale straw yellow with greenish highlights.
Elegant yet intense, with hints of pineapple, pear and acacia blossoms.
Appealingly fresh and elegant, with delightful balance.
An attractive and light aperitif, it also goes extremely well with hors d’oeuvres (particularly those based on fish) or warm appetizers like vol-au-vents. It can accompany any subtly flavored soup, pasta or rice dish, especially those featuring vegetables or those with delicate sauces.
