Vinification and ageing
The Ribolla Gialla grapes are harvested when sugar concentration and acidity are ideal for the production of a fresh base wine with mineral notes. They are then gently crushed and pressed to extract only the best quality must. After a period of ageing on yeasts, the base wine is transferred to autoclave for sparkling. The Charmat method enhances the characteristics of the aromas, the freshness and the savoury notes typical of the varietal.

Colour
Straw yellow in colour with a fine and persistent perlage.

Nose
Satisfyingly intense, very fruity, with peach and apple notes.

Palate
Fresh and very well balanced with nuances of crunchy white fruit.

Serving temperature
Best served between 6° - 8° C.

Food pairings
Ideal as an aperitif, it also pairs well with starters, delicate dishes with fish or prosciutto Dan Daniele and typical Friuli cuisine such as frico.
